Description
This is the oil Ahmet actually cooks with — not a souvenir version of it. It goes out at dede, the two-Michelin-star dining room, inside the courses themselves, and it runs through our Bib Gourmand kitchen too. The oil that helped win the stars, in the same bottle we use on the pass.
Early-harvest tomato-type (domat) olives from Gömeç, on the Turkish Aegean coast, cold pressed and bottled unfiltered for us by Kisthene under our own label. Acidity of 0.2 — green and peppery, with the bitter-almond bite and grassy top note you only get from fruit picked young and pressed the same day.
Unfiltered, so it can cloud when it’s cold. That’s the point.
