Killahora's Cork orchard ice wine, made by freezing rare bittersweet apples to a rich must and fermenting slowly for over a year. Deep honeyed apple and orange peel, lusciously sweet but held taut by burnished acidity through a long apricot finish.
Pairs with West Cork blue cheese, tarte Tatin, or Ardsallagh goat's cheese.
